1 (10 inch) Pie shell (unbaked)
1 lb. cottage cheese
2 c. unseasoned mashed potatoes
1/2 c. sour cream
2 eggs
2 tsp. salt
1/8 tsp. pepper
1/2 c. scallions, thinly sliced
3 Tbsp. Parmesan cheese, grated
Recipe
Mix cottage cheese and mashed potatoes; beat in sour cream, eggs, salt, and pepper. Stir in scallions.Pour in pastry shell and sprinkle top with Parmesan cheese. Bake at 425 for 50 minutes until golden brown.
