    Pineapple cookies that have been a favourite of mine for at least 25 years.

    List of Ingredients




    1/2 cup shortening
    1/2 cup brown sugar
    1/2 white sugar
    1 egg, beaten
    2 cups flour
    2 tsps. baking powder
    1/4 tsp. baking soda
    1 cup crushed pineapple
    2/3 cup chopped walnuts
    1/4 tsp. salt
    1/2 tsp vanilla

    Recipe



    Cream shortening and sugars. Add beaten egg. Add dry ingredients.
    Drain pineapple and add to mixture, then nuts and flavoring.
    Drop from spoon on greased baking sheet. Bake at 350 degrees for 15-20 minutes.
    Makes about 4 dozen
