This recipe is supposed to be from 1620, but who knows for sure ?
List of Ingredients
4 pounds brisket
4 pounds fowl
1/2 pound of fat pork
pepper
6 small turnips, quartered
6 small onions, whole
6 medium potatoes, halve or quarter
1 1/2 quarts pea beans
2 1/2 quarts cooked, hulled corn
Recipe
Soak beans overnight. Cook and mash
Soak brisket 1 hour. Drain. Place in kettle with chicken and salt pork. Cover with cold water, season with pepper. Bring slowly to a boil. Simmer very gently four hours. Add hot water to keep meat covered. When tender, add vegetables and cook gently 35 minutes. Remove meat and vegetables. Stir in mashed beans. add corn. Serve each portion with a piece of brisket, fowl and vegetables.
Makes several quarts.
Better when reheated.
