Recipe Introduction
My sorority has an annual Salad Supper and this was my favorite salad that got brought this year (2004). I loved the way the cheddar was in chunks instead of shredded. I think grape tomatoes instead of chopped tomatoes would also be good. Some basil would probably be good in the dressing and maybe even olive oil instead of vegetable oil. But if you follow the recipe as stated it will definitely be good, too!
List of Ingredients
1 lb. spiral macaroni -- cooked and drained
3 medium tomatoes -- diced and seeded
1 lb. cheddar cheese -- cubed
1 bunch green onions -- sliced (1 to 2 bunches)
3 oz. sliced pepperoni
Dressing:
3/4 c. vegetable oil
2/3 c. grated Parmesan cheese
1/2 c. red wine vinegar
2 t. dried oregano
1 t. garlic powder
1 t. salt
1/4 t. pepper
croutons -- optional Recipe
In a large bowl, combine macaroni, tomatoes, cheddar, green onions, and pepperoni.
In a small bowl, combine oil, Parmesan, vinegar, and seasonings; pour over macaroni mixture.
Cover and refrigerate several hours.
Top with croutons, if desired, just before serving.
