    Microwave Mexican Casserole


    1 pound ground beef
    1 small onion, chopped
    2 c. crushed taco chips
    1 (1 1/4 oz.) pkg. taco
    seasoning mix
    1 (16 oz.) can whole tomatoes,
    undrained
    1 c. shredded Cheddar cheese
    1 c. sour cream

    Recipe




    Crumble ground beef and onions into microwave-safe dish.

    Microwave on High power (10) uncovered 5 to 6 minutes or until no longer pink, stirring once to break meat apart. Layer 1 cup taco chips in bottom of 1 1/2-quart microwave casserole dish.

    Cover with ground beef, dry taco seasoning mix, tomatoes (cut
    tomatoes into quarters), sour cream and cheese. Top with
    remaining chips. Microwave on High (10) uncovered 5 to 6
    minutes to 150 degrees or until cheese melts and casserole is heated through, rotating dish once. Makes 6 servings.
