Microwave Mexican Corn Pudding
1 egg
1/2 c. milk
1 can creamed corn
1/2 c. crushed taco chips
2 Tbsp. butter
1 c. shredded Monterey Jack
cheese (4 oz.)
1/4 c. chopped jalapeno
peppers

Beat eggs until blended in 6 cup microwave casserole
dish. Stir in milk, corn, crushed chips, half of the cheese, peppers and butter.
Microwave on Medium high 5 minutes, stir
to blend; microwave 6 minutes longer or until center is barely set.
Sprinkle with remaining cheese.
Top with taco chips.
Let stand 5 minutes before serving.
Makes 4 servings.
