    Microwave Nacho Potato Slices


    2 large baking potatoes -- about 1 1/4 lbs. total
    Salt
    1/3 cup chopped scallions
    1 can chopped green chilies (4 oz)
    1/2 cup salsa -- bottled or homemade
    1 can sliced black olives (2 1/4 oz)
    1/2 cup shredded Cheddar or Monterey Jack cheese

    Recipe




    Scrub potatoes, trim ends and cut into slices 3/8 inch thick.

    In a microwave safe dish, arrange potato slices in a single layer. Season lightly with salt. Top with scallions and chiles. Cover with microwave safe plastic wrap, turning a corner back to allow steam to escape. Microwave on High 8 to 10 minute, until potatoes are tender.

    Drizzle salsa over potato slices, then sprinkle with olives and
    cheese. Microwave uncovered on medium, 1 minute, or until cheese is melted. Serve hot.
