Potpourri Potatoes
4 medium-large potatoes (2
lb.), cubed
1/4 c. chopped green pepper
1/4 c. chopped red pepper or
pimento
1 c. Pepperidge Farm stuffing
mix
1/4 c. chopped onion
1 stick margarineRecipe
Cook cubed potatoes 6 minutes a pound or 12 minutes for 2 pounds; then drain.
Cook on High.
Add chopped vegetables, stuffing mix and melted butter.
Cover and cook on High for 5 minutes in microwave.
