    Microwaved Split Pea Soup


    1 qt. low-sodium beef broth
    1 qt. hot water
    2 c. split peas
    1 medium onion, chopped
    1/2 tsp. basil
    1/4 tsp. pepper
    1 bay leaf
    2 stalks celery
    2 medium carrots, cut thin

    Recipe




    Combine water, broth, peas, onion and seasonings in 5 quart casserole.

    Cover.

    Microwave at High for 40 minutes, stirring several times.

    Add vegetables.

    Microwave, uncovered, 20 to 30 minutes, or until soup is desired thickness, and vegetables are tender.

    Stir several times.

    Remove bay leaf.
