    Twice Baked Sweet Potatoes


    1 sweet potato
    1 tbsp fat-free milk
    2 tsp brown sugar
    1/8 tsp cinnamon
    1/8 tsp nutmeg
    1/4 cup pecan pieces

    Recipe




    Heat oven to 425 degrees.

    Cut potatoes lengthwise in half, place cut side down on foil lined baking pan.

    Bake 30-35 minutes.

    Scoop centers out of potatoes leaving 1/4 inch thick shells.

    Add milk, sugar, nutmeg, cinnamon to potatoes, mash until blended.

    Spoon potato mixture into shells, top with nuts.

    Bake another 8 min
