    Apple Pear Salad

    Servings: 50

    List of Ingredients

    8 pounds red delicious apples (8 to 10)
    8 pears, anjou (8 to 10)
    50 leaves leaf lettuce
    3 pounds blue cheese, crumbled
    1 quart Apple Cider Dressing

    Recipe

    1. Core and section each pear and apple into 6-8 slices. Sip in diluted lemon juice to reduce discoloration.

    2. Line salad plate with lettuce leaf. Alternate 3-4 sections of each fruit in a pinwheel-like arrangement on top of lettuce leaf.

    3. Sprinkle with 1 oz blue cheese. Drizzle with 1-2 Tbsp Apple Cider Dressing.
