Crunchy- Blue Cheese Walnut Bites

Yields about 72 cookies
1 1/2 cups all-purpose flour
2-3 teaspoons cracked black pepper
8 ounces blue cheese
1/4 cup butter
1 cup chopped walnuts
2 large egg yolks, slightly beaten
Recipe
In medium bowl, combine flour and pepper. With pastry blender or two table knives, cut in cheese and butter until coarse crumbs form. Thoroughly stir in walnuts and yolks; form mixture into a ball and knead lightly to blend well.
Halve dough and shape each half into a 9-inch log. Wrap each separately in plastic and chill at least 2 hours.
Preheat oven to 425 degrees.
Cut each log 1/4-inch thick and arrange slices 1 inch apart on ungreased baking sheet. Bake 8-10 minutes or until bottoms and edges are golden brown.
Serve warm or at room temperature. Refrigerate leftover walnut bites in tightly covered container up to a week.
