1 cup grated extra-sharp Cheddar (about 1/4 pound)
1 large egg, beaten lightly
2 1/2 teaspoons minced pickled jalapeno pepper (wear rubber gloves
sixteen 1 1/2-inch toast rounds, cut from slices of white or whole-wheat bread, toasted lightlyRecipe
In a small bowl stir together the Cheddar, the egg, and the jalapeno pepper until the mixture is combined well. Spread 1 teaspoon of the mixture on each toast round, mounding it and broil the canapes in a jelly-roll pan under a preheated broiler about 4 inches from the heat for 2 to 3 minutes, or until they are puffed and golden. Makes 16 canapes.
