Canape- Shrimp Canapes

Prep time: 30 minutes plus chilling
Cooking time: 2 minutes
1/2 pound peeled medium shrimp
1/4 cup mayonnaise or salad dressing
1/4 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1 tablespoon dry sherry
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
pinch ground red pepper
1/3 cup chopped fresh parsley
14 slices firm white bread
2 tablespoons butter, softened (no substitutes)
Recipe
1. Cook shrimp in boiling water 2 minutes, until shrimp turn pink and are opaque.
2. Place shrimp in food processor with mayonnaise, lemon peel, lemon juice, sherry, salt, black pepper and ground red pepper; process until smooth.
3. Place parsley on a plate. Spread 2 slighty round tablespoon of the shrimp mixture evenly onto 1 slice of bread. Cover with another bread slice. Lightly spread bread with butter and press into parsly, tapping off excess. Repeat, making 6 more sandwiches. Wrap in plastic warp and chill at least 1 hour or up to 4 hours. Cut each into 4 triangles. Makes 28 canapes.
