Fried-Fried Beef Pies

3/4 pound lean ground beef
2 large plum tomatoes, chopped
1 small onion, chopped
1 small carrot, scraped and coarsely shredded
1 stalk celery, thinly sliced
1/4 cup currants
1 tablespoon capers
1 teaspoon salt
1 1/2 teaspoon pepper

Brown ground beef in a large skillet, stirring until it crumbles; drain well, and place in a large bowl.
Add tomato and next 5 ingredients to skillet; cook over medium heat, stirring constantly 5 minutes or until vegetables are tender. Add to beef.
Stir in capers, salt, and pepper.
Spoon 1 tablespoon beef mixture onto half of each wonton wrapper. Moisten edges with water; fold wrapper over filling, forming a triangle, and press edges to seal.
Pour oil to depth of 1 inch into a large heavy skillet or Dutch oven; heat to 375 degrees. Fry pies in hot oil 1 to 2 minutes or until golden, turning once. Drain well on paper towels, and serve immediately. Yield 4 dozen.
