    List of Ingredients




    Serves 6-8

    1 pound dried small red beans

    1 large yellow onion, chopped

    5 cloves garlic, minced or pressed

    1 bunch parsley, finely chopped

    2 stalks celery, finely chopped

    1 ham hock or 5 slices chopped bacon

    2 tablespoons dried basil

    2 teaspoons salt

    1 tablespoon finely ground black pepper

    1/3 cup brown sugar

    2 dashes Tabasco

    2 bay leaves

    Water

    2 cups uncooked converted white rice

    Recipe



    Rinse beans and pick over to make sure there are no rocks. Do not soak beans. Put all ingredients, except rice, into a large pot. Add water to cover, and simmer, uncovered, 3 to 4 hours, until beans are tender. Add more water as necessary.


    Half an hour before serving, prepare white rice according to package directions. Serve red beans over rice with lots of pot liquor and hot corn bread.


    Nutritional analysis per serving: 379 calories, 2 grams fat, 74 grams carbohydrates, 17 grams protein, 3 milligrams cholesterol, 665 milligrams sodium, 5 percent of calories from fat.
