Santa Maria BBQ Beans from Kathryn Cushman

List of Ingredients
2 pounds Poquitos beans
1 enevelope chili mix
1 medium onion, diced
2 cloves garlic, minced
1/2 pound bacon, diced
1/2 pound ground beef
1/2 teaspoon pepper
4 teaspoons salt
1/2 teaspoon oregano
1/2 teaspoon MSG (optional)
1 1/2 cups tomato juice
Recipe
Cover beans generously with water, bring to boil, and add salt and pepper. Turn heat to simmer and cook two hours or until tender. (Beans may be pre-soaked to reduce cooking time.)
Saute bacon,onion, garlic, seasonings, chili mix, tomato juice and ground beef. Add mixture to beans and simmer 1 hour and serve. Makes 10-16 servings.
Pocquitos beans are found in the Santa Maria area. Other small dry beans may be substituted.
