Marinated Tomatoes
List of Ingredients
3 large tomatoes
1/3 Cup olive oil
1/4 Cup red wine vinegar
1 teaspoon salt
1/4 teaspoon pepper
1/2 clove garlic, crushed
1 tablespoon chopped parsley
1 tablespoon chopped fresh basil
or 1 teaspoon dried whole basil
2 tablespoons chopped onion
Recipe
Cut tomatoes into 1/2-inch-thick
slices, and arrange in a large shallow
dish; set aside.
Combine remaining ingredients in a
jar; cover tightly, and shake vig-
orously. Pour over tomato slices.
Cover and marinate in refrigerator
several hours. Yield: 6 servings.
