    Lucy likes Mexican casserole, maybe you will too.


    List of Ingredients


    • 1 can black beans
    • 1 Cup corn
    • 2 small cans sliced black olives
    • 8 oz. shredded cheese (cheddar or monterey jack)
    • 8 flour tortillas
    • 1 can/jar enchilada sauce


    Instructions


    1. Layer the ingredients between tortillas in a deep round casserole dish. (Same size as the tortillas)
    2. Pour enchilada sauce over the top.
    3. Bake at 425 for 30 minutes.
    4. NOTE: You can vary the ingredients to your taste.
