List of Ingredients
- 1 can black beans
- 1 Cup corn
- 2 small cans sliced black olives
- 8 oz. shredded cheese (cheddar or monterey jack)
- 8 flour tortillas
- 1 can/jar enchilada sauce
Instructions
- Layer the ingredients between tortillas in a deep round casserole dish. (Same size as the tortillas)
- Pour enchilada sauce over the top.
- Bake at 425 for 30 minutes.
- NOTE: You can vary the ingredients to your taste.
