Do Your Kids or Someone Else in your household find vegetables boring? In the New Dietary Guidelines for Americans, health and nutrition experts suggest eating more vegetables than ever before. But that doesn’t help moms who are looking for ways to sneak those servings onto the plates of picky eaters.
If you’re trying to increase the number of veggies your family consumes, consider these easy ideas
Top burgers with extra tomatoes, lettuce or pickles – or - spoon tomato salsa over grilled turkey patties or fish fillets.
Stir carrot juice into your morning glass of orange juice – or - blend cucumbers into smoothies for a refreshing afternoon pick-me-up.
Puree a variety of vegetables into a sensational sandwich spread or use the mixture to thicken sauces.
Add tomatoes to omelets at breakfast and to rice dishes at dinner. Include chopped broccoli in your favorite spaghetti sauce.
Toss pasta with green onions, cauliflower and sliced carrot coins…and work snow peas into green salads.
Grill of broil vegetables along side entrees. Combine herbs with a medley of sliced produce and wrap it in foil. Set the foil packet over hot coals until the veggies are tender.
Mix finely diced celery into homemade salad dressings, sliced jalapeno peppers into dough bread and chopped spinach into low-calorie dips and spreads.
Fill tomatoes or bell peppers with light chicken salad. Slice a small zucchini in half lengthwise, scoop out s bit of the flesh and replace it with low-fat tuna salad.
