    Apple-Onion Pork Chops
    Alert! High fat recipe (14 mg)
    Serves: 4

    4 lean boneless pork loin chops (4-oz. each)
    1/2 tsp. salt
    1/4 to 1/2 tsp. pepper
    2 T. olive – or – canola, ‘divided’
    2 c. sliced red onions (1/2-in. slices
    1 large tart apple, peeled and chopped
    3 T. red wine vinegar – or – cider vinegar
    1/3 c. reduced-sodium chicken broth

    Sprinkle both sides of chops with salt and pepper. In a large nonstick skillet, brown chops in 1 T. oil on both sides over medium-high heat. Remove and keep warm. In same skillet, cook onions and apple in remaining oil over low heat until golden brown, about 30 minutes.

    Return pork chops to pan. Add vinegar; cook for 2 minutes. Stir in broth. Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until meat is tender.
