    Makes 15 large bars

    Canola spray
    1 box Lemon cake mix w/pudding
    1 large egg
    3T canola oil
    3T fat-free or lite sour cream
    2T lemon juice
    1/3cup powdered sugar
    8 oz. light cream cheese
    1/3c. granulated sugar
    2 T. lemon juice
    zest from 1 to 2 lemons.

    Preheat oven to 350 degrees. Coat a 9x13" baking pan w/canola spray.

    Pour cake mix into large bowl and add egg, oil, sour cream and 2T lemon juice...mix until well blended.

    Reserve 1C of mix for the top later and pat the rest evenly into the prepared pan...if you coat your hands w/powdered sugar, it doesn't stick as badly...bake for 12 minutes and set aside to cool.

    Meanwhile, in med. mixing bowl, beat cr.cheese w/sugar and lemon juice until smooth...add zest to mixture. Spread the mixture gently & evenly over the baked crust...again powdering fingers w/sugar and crumble the reserved cake
    mix mixture over the top of the cr.cheese layer.

    Bake until set and lightly browned - 15-18 minutes. Cool completely before cutting and refrigerate leftovers.

    One bar equals: 18 calories; 3.5g protein; 35.5g carbohydrate; 7g fat (2g sat fat); 19mg cholesterol; 1g fiber; 283mg sodium.
