    Spinach Bacon Loaf

    Low-Fat Country Cooking – J. Hios; Brooklyn, NY
    Spinach Bacon Loaf

    Serves: 10

    2 garlic cloves, minced
    2 10-oz. pkgs. Frozen chopped spinach, thawed and squeezed dry
    1/4 tsp. pepper
    6 turkey bacon strips, cooked and crumbled
    1-1/2 c. (6-oz.) shredded part-skim mozzarella cheese
    1 loaf (1-lb) Italian bread
    1/2 c. shredded Parmesan cheese

    In a large skillet coated with nonstick cooking spray, sauté garlic over medium heat. Add spinach and pepper, stirring occasionally, until heated through. Remove from heat, cool for 5 minutes. Add bacon and mozzarella; mix well.

    Slice bread horizontally. Spread about 2-1/4 cups spinach mixture on each half. Sprinkle with Parmesan. Bake at 400º for 6-8 minutes or until cheese is melted.
    Cut each half of bread into 5 pieces.

    One serving equals: 217 calories…7 gm fat (3 gm saturated)…8 mg cholesterol…554 mg sodium…26 gm carbohydrate…13 gm protein
