Cajun Seasoning (No Salt) -- w
Yield: 1/4 c. + 1 T.
1 T. black peppercorns
1 T. dried whole basil
1 T. paprika
1 tsp. cumin seeds, crushed
1 tsp. caraway seeds, crushed
1 tsp. fennel seeds, crushed
1 tsp. dried whole thyme
1 tsp. whole oregano
1 tsp. ground white pepper
1/2 tsp. crushed red pepper
Combine all ingredients in a skillet; place over medium-high heat. Cook 3 to 4 minutes or until lightly toasted, stirring constantly. Let cool completely. Store in an airtight container. Use to coat fish or poultry before grilling.
