    CARAWAY RED CABBAGE

    1/2 c. chopped onion
    1 T. stick margarine
    1/2 c. water
    4 tsp. white vinegar
    3/4 tsp. caraway seeds
    9 c. shredded red cabbage
    Sugar substitute equivalent to 4 tsp. sugar

    In a large saucepan, sauté onion in margarine until tender. Add the next 4 ingredients. Cover and simmer for 30 minutes, stirring occasionally. Stir in sugar substitute.

    One 1/2-cup serving equals: 31 calories…1 gm fat (trace saturated)…3 mg cholesterol…23 mg sodium…5 gm carbohydrate…2 gm fiber…1 gm protein ++++ Exchanges: 1 vegetable ++++ WWP: 1
