    8 Minute Light 'n Fruity Pie

    List of Ingredients


    • 1 (3-oz.) pkg. Jell-O, any flavor
    • 2/3 cup boiling water
    • 2 cups ice cubes
    • 3-1/2 cups Cool Whip topping
    • 1 cup diced fruit *
    • 1 (9-inch) graham cracker crust


    Instructions


    1. Completely dissolve Jell-O in boiling water, stirring, for about 3 minutes. Add ice cubes and stir until Jell-O is thickened, 2 to 3 minutes. Remove any unmelted ice.

    2. Using a wire whip, blend in whipped topping; whip until smooth. Fold in fruit. Chill, if necessary, until mixture mounds.

      Spoon mixture into piecrust. Chill pie for 2 hours.

      * Suggested fruit: Fresh strawberries, raspberries or blueberries. Can also use canned, drained apricots, peaches or crushed pineapple in syrup.
