    1¾ cup all purpose flour
    1½ cup sugar
    1 tsp soda
    1 tsp cinnamon
    1 tsp nutmeg
    ¾ tsp salt
    ¼ tsp allspice
    ¼ tsp cloves
    2 eggs
    1½ cup mashed sweet potatoes (about 2 medium)
    ½ cup vegetable oil
    6 T orange juice
    ½ cup chopped pecans

    Recipe



    In a large bowl, combine the first 8 ingredients. In a small bowl, whisk eggs, sweet potatoes, oil and orange juice. Stir into dry ingredients just until moistened. Fold in pecans. Transfer to a greased 9x5x3 loaf pan. Bake at 350° for 60-65 minutes or until done. Cool in pan for 10 minutes. Completely cool on wire rack.
