    Christmas Brunch Casserole

    List of Ingredients

    1 to 2 pounds sausage
    4 cups frozen hash brown potatoes, thawed
    1 tsp salt
    ¼ tsp garlic salt
    ½ tsp black pepper
    6-8 eggs
    1½ cups milk
    1 pinch dried parsley
    1 cup shredded Cheddar cheese

    Recipe

    Preheat oven to 350°. Grease a 9x13 casserole dish. Cook sausage until crumbly and no longer pink. Place potatoes in bottom of dish. Sprinkle with salt, garlic salt and pepper. Top with sausage. In a large bowl beat eggs with milk and parsley. Pour mixture over casserole. Cover and refrierate overnight. Bake in preheated oven for 1 hour or until set. Add the cheese the last 20 minutes of cooking.
