Pumpkin Roll

List of Ingredients
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
¾ cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
½ tsp salt
1 cup chopped nuts
FILLING
1 cup powdered sugar
6 oz. cream cheese
4 T butter
½ tsp vanillaRecipe
Beat 3 eggs five minutes. Gradually beat in 1 cup sugar. Stir in 2/3 cup pumpkin and 1 tsp lemon juice. Sift ¾ cup flour and all dry ingredients. Fold in pumpkin mixture. Spread ingredients in a greased and floured jelly roll pan. Top with 1 cup chopped nuts. Bake at 375° for 15 minutes. After roll is baked turn out on kitchen towel dusted with powdered sugar. Roll up and allow to cool.
Spread out. Fill with filling and reroll.
