Black Bean Soup

List of Ingredients
2 T vegetable oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1 tsp of minced garlic, optional
3 cans (15oz) black beans (you may use Ranch Style Black Beans)
2 cans (10oz) Rotel Tomatoes
1 can (11oz) whole kernel corn with chopped red and green peppers, drained
1/4 cup finely chopped cilantro, optional
Recipe
Heat oil in large saucepan, over medium heat. Add onions, celery and carrots; mix well. Cook 15 minutes or until vegetables are tender, stirring frequently. Add beans, tomatoes and their liquids and the corn; mix well. Bring to a boil. Reduce heat to medium-low, simmer 20 minutes, stirring occasionally. Stir in cilantro just before serving.
