    I found this recipe in 1999 and have not made any other banana bread since. It is great, you can not tell there is cornmeal in it. I am putting it here for safe keeping even though it is not vintage.


    List of Ingredients


    • 1 box cornbread mix (jiffy type stuff)
    • 3/4 cup chopped nuts
    • 1/2 cup sugar
    • 2 eggs
    • 1 cup mashed bananas


    Instructions


    1. Mix cornbread mix, nuts and sugar in a medium bowl.
    2. Blend together eggs and bananas.
    3. Stir into dry mixture until completely moistened.
    4. Bake in greased loaf pan for 50-60 minutes.
