List of Ingredients
Snapper or Mahi Mahi Fillets
1 Sweet onion diced
1 Red pepper diced
1 Mango diced
1 Tbsp. Capers (salt rinsed off)
Bunch of fresh cilantro, chopped
20 cherry tomatoes halved, or quartered
2 cloves garlic chopped fine
splash of balsamic vinegar, or red wine vinegar, to taste
juice from 1/2 fresh lemon
salt & pepper to taste
optional: 1/4 tsp. good bottled island hot sauce
Recipe
Make a salsa of all the above ingredients (except fish) and leave to sit for 15 minutes.
Sauté fish fillets in your usual way (oil or butter, or both), until tender
Sometimes I dredge the fillets in flour, salt & pepper, and sauté until lightly browned, but do not overcook. Usually a couple of minutes per side. Horrid if fish is overcooked and dry.
When ready to serve, spoon desired amount of salsa on fish.
