LEMON TEA COOKIES
3/4 c. butter (no substitutes), softened
1/2 c. sugar
1 egg yolk
1/2 tsp. vanilla
2 c. flour
1/4 c. finely chopped walnuts
FILLING:
3 T. butter, softened
4-1/2 tsp. lemon juice
3/4 tsp. fresh orange peel
1-1/2 c. powdered sugar
2 drops yellow food coloringRecipe
In a mixing bowl, cream butter and sugar. Beat in the egg yolk and vanilla. Gradually add flour. Shape into 2 14" rolls; reshape each roll into a 14 x 1/1/8" block. Wrap each in plastic wrap. Refrigerate overnight.
Unwrap and cut into 1/4" slices. Place 2" apart on ungreased cookie sheets.
Bake at 350 until lightly brown-6-8 minutes. Watch closely so as to not overbrown.
Fill with lemon filling when cool.
