Popeye Muffins
2 cups all purpose flour
1/4 cup sugar
2 tsp. baking powder
1 tsp. salt
3/4 cup milk
1/4 cup vegetable oil
2 eggs
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
6 oz. cheddar cheese, shredded (1 1/2 cups), divided.
Preheat oven to 375. Spray 12 cup muffin pan with nonstick cooking spray or line with paper muffin liners.
IN large bowl, combine flour, sugar, baking powder and salt. Add milk, oil and eggs. With wooden spoon, stir until just combined. Stir in spinach and 1 1/4 cups cheese. Evenly spoon batter into prepared muffin pan. Sprinkle muffins with remaining 1/4 Cup cheese. Bake 20 to 25 minutes until wooden pick inserted in center comes out clean and cheese on top is melted. Serve with butter.
