    List of Ingredients




    1 tablespoon oil
    1 cup sliced green bell pepper
    1 cup sliced fresh mushrooms
    1/2 cup sliced red onion
    1 teaspoon minced garlic
    6 egg, beaten
    6 8-inch flour tortillas
    1 1/2 cups shredded Colby and Monterey Jack Cheese
    1 12 -ounce package Hormel bacon - cooked and crumbled
    Salsa
    Sour Cream

    Recipe



    Heat oven to 350 degrees.
    In large skillet, in oil, cook bell pepper, mushrooms, onion, and garlic unil tender.
    Set aside.
    Add beaten eggs.
    Cook until lightly scrambled.
    Stir in vegetables.
    Spoon egg mixture down center of each tortilla.
    Sprinkle with cheese and bacon.
    Roll up.
    Place seam-side down in 13x9 inch baking pan.
    Bake 5 to 8 minutes or until hot.
    Serve with salsa and sour cream.
