    Zucchini Drop Cookies


    List of Ingredients


    • 1 cup margarie
    • 1 cup packed brown sugar
    • 1 egg
    • 1 1/2 teaspoon vanilla extract
    • 1 cup grated unpeeled zucchi
    • 2 to 2 1/4 cups flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 1/2 teaspoon cinnamon
    • 1 1/2 teaspoon nutmeg
    • 1 cup shredded coconut
    • 1 cup chopped walnuts.


    Instructions


    1. Preheat oven to 350 degrees.

    2. In large bowl, beat together butter or margarine, brown sugar, egg and vanilla until light and fluffy.

    3. Stir in zucchini. Add flour, baking powder, baking soda, cinnamon, nutmeg and salt.

    4. Add additional flour if needed.

    5. Add coconut and walnuts.

    6. Drop by tablespoons on ungreased pan, 2 inches apart.

    7. Bake 10 to 12 minutes or until lightly browned.
