6 chicken breasts halves
pepper
paprika
1/4 cup extra virgin olive oil
1 - 15 oz can artichoke hearts, drained andquartered
1/2 lb. mushrooms, sliced thinly
1/4 cup flour
2 cups chicken broth
1/2 cup red wine
1 Tbs. chopped fresh rosemary
Rinse chicken, remove skins. Sprinkle with pepper and paprika. In a fry pan, brown chicken pieces in olive oil. Transfer chicken to a shallow 3 qt. casserole and arrange artichokes in between, set aside. Add mushrooms and saute. Stir flour into mushrooms and cook 1 minute; then add broth, wine, and rosemary. Cook and stir until thickened. Pour sauce evenly over chicken and artichokes. Cover and bake in 375 degree oven for 45 minutes.
