    List of Ingredients




    4 boneless, skinless chicken breasts, cooked
    1/2 cup mayonnaise
    1 tablespoon lemon juice
    1/2 teaspoon hot pepper sauce
    1/4 teaspoon coarse ground black pepper
    1 teaspoon basil
    1/2 cup chopped celery
    3 tablespoons capers
    1/4 cup sun-dried tomatoes, cut into strips
    1 cup grated mozzarella cheese
    1/4 cup black olives
    4 French bread mini loaves
    Parmesan cheese


    Cut chicken into bite-sized pieces. In a bowl mix together mayonnaise, lemon juice, hot pepper sauce, black pepper and basil. Mix in chicken, capers, celery, tomatoes, cheese and olives. Slice top off mini loaves lengthwise and hollow to form boats. Brush with melted butter, garlic and parsley. Broil until golden and toasty. Fill with salad mixture and sprinkle with Parmesan cheese. Makes 4 servings.
