Fajita Fried Chicken with Queso Rice
List of Ingredients
1/2 cup all-purpose flour
1 (1.4-ounce) envelope fajita seasoning mix
4 skinned and boned chicken breast halves
1/4 cup vegetable oil
2 cups uncooked quick-cooking rice
1 (15.5-ounce) jar mild salsa con queso
Recipe
COMBINE flour and fajita seasoning mix; dredge chicken in mixture.
FRY chicken in hot oil in a large skillet over medium-high heat 4 minutes on each side or until done. Remove from skillet; keep warm.
PREPARE rice according to package directions. Heat salsa con queso over medium heat until hot; stir into rice. Serve with chicken.
Makes 4 servings.
