This is almost like Willa use to make!
List of Ingredients
2 tsp salt
1 tsp paprika
3/4 tsp cayenne pepper
1/2 tsp onion powder
1/2 tsp thyme
1/4 tsp pepper or less [I use less]
1/4 tsp garlic powder
1/4 tsp black pepper I leave out altogether too much pepper for me
1 whole roasting chicken about 3 lbs
1 cup chopped onions
Recipe
Combine all spices in a small bowl
Rinse chicken inside and out, drain well
Rub spice mixture over skin and the inside of the chicken
Place in a zip lock bag and chill overnight
When ready to bake stuff cavity with onions [don't leave this out they just disappear during cooking but leave a wonderful flavor]
Place chicken breast side down in a roasting pan, sprayed with Pam
Bake uncovered 5 hours at 250o[not a typo]
This is the most tender and delicious chicken ever and the drippings make wonderful gravy.
