Beans and Rice Salad
List of Ingredients
- 1 - 15 ounce can black beans, drained
- 1/4 cup Italian dressing
- 1/4 teaspoon pepper
- 3/4 cup long grained rice, uncooked
- 1/4 cup Italian dressing
- Lettuce leaves
- 3/4 cup shredded cheddar cheese
- 3 green onions - thinly sliced
- 1 medium tomato - chopped
- Sour cream
Instructions
- Combine first 3 ingredients, cover and chill at least 8 hours.
- Cook rice according to directions. Rinse with cold water, drain.
- Combine rice and 1/4 cup Italian dressing; stir well. Chill at least 8 hours.
- Spoon rice onto individual lettuce lined plates. Spoon bean mixture over rice. Top with cheese, green onions, tomato and sour cream
