    Beans and Rice Salad


    List of Ingredients


    • 1 - 15 ounce can black beans, drained
    • 1/4 cup Italian dressing
    • 1/4 teaspoon pepper
    • 3/4 cup long grained rice, uncooked
    • 1/4 cup Italian dressing
    • Lettuce leaves
    • 3/4 cup shredded cheddar cheese
    • 3 green onions - thinly sliced
    • 1 medium tomato - chopped
    • Sour cream


    Instructions


    1. Combine first 3 ingredients, cover and chill at least 8 hours.
    2. Cook rice according to directions. Rinse with cold water, drain.
    3. Combine rice and 1/4 cup Italian dressing; stir well. Chill at least 8 hours.
    4. Spoon rice onto individual lettuce lined plates. Spoon bean mixture over rice. Top with cheese, green onions, tomato and sour cream
