Coleslaw with Bacon, Apples & Cheddar

1 (16-oz.) pkg. Farmland® Hickory Smoked Bacon
1/4 cup olive oil
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon hot sauce
4 cups packaged shredded coleslaw mix
1 large red apple, unpeeled, cored and finely diced
1 cup (4 oz.) shredded sharp Cheddar cheese
Preparation
Cook bacon according to package directions until crisp; drain and crumble.
Whisk together oil, mayonnaise, mustard and hot sauce in small bowl.
Combine cabbage, apple, cheese and crumbled bacon in serving bowl. Add dressing and toss to coat. Refrigerate at least 30 minutes before serving.
Serves 4
