    Gazpacho Salad

    This will be a great way to use some of the veggies from you or your neighbor's garden.


    List of Ingredients


    • 2 3/4 cups diced tomatoes or 1 basket cherry tomatoes - halved
    • 2 cups peeled - seeded and sliced cucumbers
    • 1 cup sliced celery
    • 1 cup sliced green bell pepper
    • 1 cup pitted ripe olives
    • 2/3 cup sliced scallions
    • 1/2 cup chopped fresh parsley
    • 1/2 cup olive oil
    • 1/4 cup olive oil
    • 1/4 cup freshly squeezed lemon juice
    • 1 to 2 teaspoons minced garlic
    • 1 Tablespoon dried basil
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground pepper


    Instructions


    1. Toss tomatoes with cucumbers, celery, bell pepper, olives, scallions and parsley.
    2. To make dressing, combine olive oil, lemon juice, garlic, basil, oregano, salt and pepper in jar with tight-fitting lid.
    3. Cover and shake well.
    4. Pour dressing over salad; toss to combine.
    5. Cover and refrigerate at least 6 hours, stirring occasionally.
