    Serves 4

    List of Ingredients





    1 Bag Baby Spinach Leaves, washed and dried
    2 Scallions, diced
    1/2 pint Strawberries, sliced
    1 Small Can Mandarin Orange Segments, drained
    1/4 Cup Blanched Almonds, sliced


    Dressing

    1/4 Cup Orange Juice
    1/4 Cup Honey
    2 Tablespoons Canola Oil
    2 Teaspoons Dijon Mustard
    Salt & Pepper to taste


    Combine dressing, refrigerate.
    Assemble salad ingredients. Add dressing right before serving.
