    1 bag Fresh Express® Baby Spinach
    ½ small red onion thinly sliced
    ½ Lb. Mushrooms thinly sliced
    2 medium ripe tomatoes cut into wedges
    ¼ Lb. Bacon, crispy fried and crumbly

    For the Dressing:

    ½ cup mayonnaise
    6 Tb. buttermilk or plain yogurt
    1 tsp. Bacon drippings
    1 tsp. White wine vinegar
    1 clove garlic, minced
    ¼ tsp. Salt
    ¼ tsp. Freshly ground pepper
    HOW TO MAKE IT
    Combine Fresh Express® Spinach, onion mushrooms and tomatoes in a salad bowl. Toss with dressing. Sprinkle with bacon.

    Dressing directions:
    Mix all the ingredients in a bowl. Cover and refrigerate until chilled. (Or your favorite salad dressing)
