    French Tuna Baguette

    12 oz can albacore tuna, drained
    2 T minced shallots
    2 T capers, rinsed, drained
    3/4 C Golden Whisk Tarragon Mayo-Dijonnaise
    4 demi baguettes, split lengthwise
    1 clove garlic, cut in half
    2 T olive oil
    2 plum tomatoes, sliced lengthwise
    12 slices hard cooked eggs, sliced
    2 C baby spinach




    In small mixing bowl combine the tuna, shallots, capers and dijonnaise. Set aside.

    Toast or grill demi-baguettes. Rub surface with garlic and brush lightly with olive oil.

    Divide tuna on bottom halves of baguettes. Layer tomatoes, eggs and spinach over. Place tops over spinach, press gently to compress.
