Celery Chowder
1 large onion, diced
1 tablespoon butter
3 cups green celery, chopped
1 cup potatoes, diced
4 cups milk
2 hard-boiled eggs, chopped
Salt and pepper, to taste
Sauté onion in butter until soft. Add celery and potatoes. Cover with water and cook until soft.
Add milk and eggs and heat thoroughly. Salt and pepper, to taste.
Makes 4 to 6 servings
