    List of Ingredients




    1/2 cup margarine
    1/2 cup finely chopped onions
    1/2 cup finely chopped celery
    2 Tbsp. cornstarch
    1 qt. warm milk
    1 cup grated cheddar cheese
    2 Tbsp. finely chopped parsley
    4 to 5 potatoes, chopped
    1/2 cup finely chopped carrots
    1/2 cup flour
    1 qt. chicken broth
    1/8 tsp. soda
    salt and pepper to taste

    Melt margarine in large pot. Add potatoes, onions, carrots and celery and sauté until soft. Add flour and cornstarch and stir well. Add chicken broth and milk. Cook, stirring constantly until mixture has a velvety texture and thickens. Add soda and cheese and stir. Season with salt and pepper. Add parsley a few minutes before serving.
