Skillet Squash and Potatoes
List of Ingredients
2 medium potatoes, peeled and sliced thinly
1/2 cup chopped onions
1 Tbsp. vegetable oil
2-3 yellow summer squash, sliced
Dash paprika
Salt & pepper to taste
In a covered skillet over medium low heat, cook
potatoes and onions in oil for 12-15 minutes.
Add squash; cook, uncovered, for 10-15 minutes or
until vegetables are tender, stirring occasionally.
Season with salt & pepper and paprika.
