Cherry Tomato Confit
1 pt. cherry tomatoes, stemmed
1 tsp. garlic, minced
2 cup olive oil
1 tsp. kosher salt
1/2 tsp. black pepper, freshly ground
Place tomatoes in deep baking pan. Season with salt and pepper and sprinkle garlic over. Pour olive oil over top and bake in a 400 degree oven for 15 minutes.
